Welcome to this month’s Blogorail Teal loop. Today we are sharing some of our favorite recipes from the Epcot International Food & Wine Festival.
Fall is almost here! For most that means cooler weather, apple picking, and all things pumpkin spice. But for Disney fans, it means that the Epcot International Food and Wine Festival will be kicking off soon! Disney and foodie fans alike all head to Walt Disney World to enjoy a wide variety of international fare. This year the festival runs from September 25- November 16 and includes special demonstrations, concerts and even more food.
We were thrilled to have had the opportunity to attend the festival last year. It’s been on our Disney bucket list for a while. Now we know what all the fuss is about. Even our kids got in on the action.
Unfortunately, we’re not making it there this year. But, we can still bring some of the magic of the Epcot International Food and Wine Festival home by recreating some of our favorite dishes. One of the stand outs on the menu for this year is the apple strudel with vanilla sauce from the Germany booth. Tart apples, plump raisins, and crunchy nuts are layered inside a blanket of freshly made bread dough. All these ingredients together create a delicious dessert.
While I love recreating my favorite Disney foods at home, I am no Disney chef. I like to tweak the recipes to fit time, budget and my family’s needs. For this at home twist, I made a few adjustments but still came away with a dessert that hits upon all the flavors of the original dish.
At Home Twist: Individual Apple Strudel with Caramel Sauce
The original recipe for Apple Strudel involves making bread dough. The process can be quite time consuming. I opted to use a store bought dough, either phyllo dough or puff pastry. Since phyllo can be tricky to work with, I chose to use puff pasty. Also, I chose to make individual strudels instead of one large one. I know my family. Individual servings tend to go much faster in our house.
For my version,you will need:
- 2 apples, peeled, cored and chopped
- 1/3 cup raisins
- 1/4 cup butter
- 1/4 cup packed light brown sugar
- 1 1/2 teaspoons cinnamon
- 1/4 cup pecans, chopped
- pinch of salt
- 2 tsp sugar
- 1 sheet puff pastry, thawed
- 1 egg, beaten
Preheat oven to 400 degrees
In a non stick skillet, combine apples, raisins, 3 tablespoons of butter, brown sugar and 1 teaspoon of cinnamon. Cook 5-6 minutes or until apples are tender. Stir in pecans and salt. Cool for 15 minutes.
Divide apple filling evenly among the 6 squares.
Bake 18-22 minutes (though mine only took about 17 in my oven) or until golden brown.
