One of the best things about Disney food is that no matter what type of eater you are, you’ll be able to find something to eat that will fit your needs. Whether you are vegetarian, vegan, gluten free, dairy free etc, Disney has got you covered. As someone who eats a primarily vegetarian diet, I’m always on the lookout for a vegetarian meal that is both healthy and satisfying.
On our last trip to Walt Disney World, we had lunch at Columbia Harbour House. I was excited to try the Lighthouse Sandwich. The sandwich is slathered with hummus on multi-grain bread. It is topped with tomato and broccoli slaw. It is served with a side of chips, but you can upgrade that to a side of fries for a small fee.

I found the sandwich to be tasty. The broccoli slaw added a nice crunch to balance out the smooth and creamy hummus. The hummus was a little heavy on garlic, so be prepared to have some gum after lunch. For $9.49, you can enjoy this healthy sandwich. Pair it with a Lemon Slush ($3.99) and you have a light and refreshing lunch perfect for a hot Florida day!

I had this sandwich a few years ago and then just last week. I wasn't as impressed the 2nd time around, but not 100% sure why. I actually get a craving for these sandwiches and make them at home sometimes.

This looks like a great meal, I haven't tried that sandwich yet. That slush looks so refreshing for a summer treat. Thanks for sharing and joining up with Favorite Food Friday!
